Tempt my Tummy Tuesday with salsa !

to share a favorite salsa recipe.

~ Tempt my Tummy Tuesday !

Southwest Super Salsa

Ingredients
1 (14 1/2-oz.) can diced tomatoes and zesty green chiles
5 pickled jalapeƱo pepper slices
1/4 cup firmly packed fresh cilantro leaves
1/4 cup chopped red onion
1 tablespoon fresh lime juice
1/4 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon dried crushed red pepper
1/4 teaspoon salt

Preparation )
Drain liquid from tomatoes, reserving 1 Tbsp. liquid; discard remaining liquid. Place reserved liquid, tomatoes, and next 8 ingredients in a food processor or blender. Pulse 5 to 6 times or until finely chopped.

Cover and chill 1 to 24 hours before serving.

Garnish, if desired.

Serve with tortilla chips.

Makes about 2 cups, enjoy !!

~ Crock Pot Cheesy Potato Soup
8- white potatoes
3 cups chicken stock
1 onion, minced
1 c. heavy cream or half and half
6 c. of shredded cheddar cheese
Cube all potatoes. Add stock and onion. Cook on low for 8 hours.
An hour before serving, add cream and cheese.
Continue cooking on low until time to serve. Serve hot.
*You can add more cheese on top, bacon, chives, sour cream, whatever you like.
Serve with crackers, bread, cornbread, whatever sounds good !

This is one of my favorite banana pudding recipes a friend shared with me and I also made it for my sons 14th birthday tomorrow. He wanted pudding instead of cake !


Banana Pudding ~ no cook
1 (5 ounce) package instant vanilla pudding mix
2 cups cold milk
1 (14 ounce) can sweetened condensed milk
1 tablespoon vanilla extract
1 (12 ounce) container frozen whipped topping, thawed
1 (16 ounce) package vanilla wafers
14 bananas, sliced

In a large mixing bowl, beat pudding mix and milk 2 minutes. Blend in condensed milk until smooth. Stir in vanilla and fold in whipped topping. Layer wafers, bananas and pudding mixture in a glass serving bowl. Chill until serving.

Strawberry Smoothies ~
1 (14 oz.) can Eagle Brand Sweetened Condensed Milk
1 (8 oz.) container strawberry yogurt
1 cup strawberries ( fresh or frozen )
1 cup ice cubes

COMBINE sweetened condensed milk, yogurt and strawberries in blender container;
cover and blend until smooth.
ADD ice cubes gradually with blender running, blending until smooth. Serve immediately.

Yummy !!

FIESTA CHICKEN
~ Ingredients
2 1/2 cups pasta, uncooked
2 tablespoons olive oil
1 pound boneless skinless chicken breasts, cut into bite-size pieces
1/2 cup chopped red peppers
1/2 cup chopped green bell peppers
1/4 cup Italian Dressing
4 tablespoons chile powder

1/2 cup Salsa
3/4 cup Sour Cream

For those who like mushrooms, I like to add 1 cup ( optional )
~ Cooking Directions
Cook pasta as directed on package.
Meanwhile, heat oil in large skillet on medium-high heat.
Add chicken. Cook
Add peppers, dressing and chili powder;
cook 3 min. or until chicken is cooked through, stirring frequently.
Stir in salsa and sour cream.
Drain pasta.
Toss with chicken mixture.

Sprinkle with cheddar or parmesan cheese if you like. Enjoy !

Warm Winter cider ~
16 maraschino cherries
8 orange slice halves
1 quart apple cider
3/4 cup orange juice
1/4 cup maraschino cherry juice
1 (3-inch) stick cinnamon or you can use red hots.

Have a very blessed warm, cozy day !

Cream Cheese Pound Cake ~

(8 ounce) package cream cheese
1 1/2 cups butter
3 cups white sugar
6 eggs
3 cups all-purpose flour
1 teaspoon vanilla extract

Directions ~
Preheat oven to 325 degrees F grease and flour a 10 inch tube pan.
In a large bowl, cream butter and cream cheese until smooth.
Add sugar gradually and beat until fluffy.
Add eggs two at a time, beating well with each addition.
Add the flour all at once and mix in. Add vanilla.
Pour into a 10 inch tube pan. Bake at 325 degrees F for 1 hour and 20 minutes. Check for
doneness at 1 hour. A toothpick inserted into center of cake will come out clean.
Serve with some whipped cream.

~ Ranch Grilled Chicken
2/3 cup Ranch salad dressing
1/3 cup yellow mustard
1/4 cup dark brown sugar
4 -5 boneless skinless chicken breasts seasoned with salt and pepper

MIX salad dressing, mustard and sugar. Pour mixture over chicken.
MARINATE chicken in refrigerator 30 mins or up to two hours.
GRILL chicken on greased rack over medium heat for 15 min. or until done.
SIMPLE, quick and so good, serve with a nice salad, side of rice and some hot rolls !

Popcorn ~

Caramel Popcorn ~
1 tablespoon vegetable oil
1 cup unpopped popcorn
1 cup packed brown sugar
1/2 cup butter
1/4 cup light corn syrup
1/2 teaspoon salt
1/2 tablespoon baking soda


In a 4 quart saucepan, add 1 tablespoon of the oil , and heat over high heat. When oil is hot, add 1 cup of popping corn.
Keep pan moving constantly. When corn stops popping, remove from heat.
Place popped corn in oven to keep warm.
Repeat until all corn has been popped.
Preheat oven to 200 F
Boil sugar, butter, syrup, and salt for 5 minutes.

Remove from heat, add baking soda. Stir well.
Pour over popped corn. Spread onto cookie sheets and place in oven for 1 hour.

Stir every 15 min. Remove from oven and let cool, breaking apart the popcorn as it cools.
Store in air tight containers.

Can You Eat Ornamental Indian Corn?

The hard, multicolored ears of corn that decorate tabletops and front doors around this time of year are, in theory, edible. If you cooked ornamental corn and ate it right off the cob, it would taste pretty bland, but it wouldn’t hurt you, according to Edith Munro, communications manager for the Iowa Corn Growers Association.
But isnt it just lovely for fall decorations ?

This time of year, I love to use apples, yummy for the fall !

Apple Crisp ~
4 1/2 cups peeled, cored and sliced apples
2 teaspoons lemon juice
2 tablespoons water
1/2 cup honey
1 teaspoon ground cinnamon
3/4 cup brown sugar
3/4 cup all-purpose flour
3/4 cup rolled oats
4 tablespoons butter
Preheat oven to 350 degrees
Lightly grease a medium casserole dish.
Evenly spread the apple slices in the prepared dish.
In a small bowl, mix the lemon juice and water, and pour over the apples.
Drizzle apples with honey, and sprinkle with cinnamon.
In a bowl, mix the brown sugar, flour, oats, and butter until the mixture resembles coarse crumbs. Sprinkle over the apples.
Bake 25-30 minutes in the preheated oven, until apples are tender and topping is lightly browned.
Top with a scoop of vanilla ice cream !

Caramel apples~
Cut up apples and drizzle caramel over them, who doesn't love a caramel apple and this is much easier to eat !

Ingredients
1 (14-ounce) can sweetened Condensed Milk
1/2 cup lemon juice ( even better if you use fresh )
1 1/2 cups whipping cream, whipped
1 (6-ounce) prepared graham cracker
In medium bowl, stir together condensed milk and lemon juice and Fold in whipped cream.
Pour into prepared crust. Chill 3 hours or until set. Enjoy

Today I am sharing some of my simple honey favorites !

Honey Butter
In small bowl, cream ½ cup margarine or butter until soft.
Slowly beat in ¼ cup honey; beat on high speed until light.
Put on biscuits, breads, potatoes, so yummy !

Honey-Orange Cream Spread
One 8-oz package cream cheese
1/4 cup honey
2 tablespoons orange juice
1/2 teaspoon grated orange peel
Spread on bagels, biscuits and breads !

Honey glaze
12 oz. honey
12 oz. butter or margarine
8 oz. brown sugar
2 teaspoon cinnamon
1 teaspoon nutmeg
Directions
Combine and mix honey, butter or margarine, brown sugar, cinnamon and nutmeg.
Cook and stir over medium heat until mixture is thickened and smooth.
Put it on ham, chicken, pork...it goes well on all !

Honey Mustard Chicken Strips

Ingredients ~
6 tablespoons Mayonnaise
1 1/2 tablespoon Dijon Mustard
2 1/2 tablespoons honey
1 pound boneless, skinless chicken breast halves, cut into strips
1 1/2 cups finely crushed corn flakes

Preparation ~
1. Preheat oven to 425° .
Combine Mayonnaise, Creamy Dijon Mustard and honey in medium bowl; reserve 1/2 for dipping.
2. Add chicken to remaining mayonnaise mixture; stir to coat, then roll in crumbs.
3.Bake 10 minutes or until chicken is thoroughly cooked.
4. Serve with reserved honey mustard sauce for dipping, enjoy !

Peanut Butter and Honey Cookies
1 cup creamy peanut butter
1/2 cup white sugar
1/2 cup butter, softened
2/3 cup honey
2 eggs
2 1/4 cups flour
1/2 teaspoon baking powder

Preheat oven to 300*
Cream together butter, sugar and honey.
Stir in the eggs and peanut butter.
Sift the flour and baking powder and then blend into peanut butter mixture.
Shape into balls and place on ungreased cookie sheet 2 inches apart.
Give them the criss cross pattern with a fork and then bake for 10-15 minutes or until lightly golden brown. Cool and Enjoy !

A friend recently gave me this recipe and hers were great, I dont have a picture because I havent made them yet, but plan to do so very soon.

Easy Buttery Biscuit Rolls

1 cup (2 sticks) butter or margerine
1 cup sour cream
2 cups self-rising flour

* Note, she said they are best in the mini muffin cups.

Preheat the oven to 350.
Melt the butter in a large saucepan over medium low heat, whisking until completely melted. Add the sour cream and flour, and mix lightly. Spoon the batter into miniature muffin cups (do not grease), filling each one to the top.
(You may add a tablespoon of dried herbs, such as basil, thyme, if you wish or 2 tablespoons of fresh herbs.)

Bake for 15 minutes. Serve immediately.

This recipe is very quick, easy,delicious, and makes about 2 dozen mini-muffins. ENJOY !

Sour Cream Potato Casserole ~ Great side dish !

Directions :
Peel potatoes and cut into 1 inch cubes.
Put potatoes in a sauce pan and cover with water.
Bring to a boil and cook for 15-20 minutes.
The potatoes should be soft enough to pierce with a fork.
Place all of the ingredients, including the potatoes, into a mixing bowl.
Beat the ingredients until blended and smooth.
Preheat the oven to 350 degrees. Place the potato mixture into a greased 9x12 baking dish. Cook in the oven until the top becomes golden, 30-50 minutes.

Ingredients
~5 pounds Potatoes
~1 cup Milk
~5 tablespoons Butter
~8 ounces Cream Cheese
~8 ounces Sour Cream
~2 teaspoons Seasoned Salt
~ 1 teaspoon black pepper

You can top with shredded Cheddar cheese, bacon bits, any toppings you like !

COLD PASTA SALAD ~

INGREDIENTS
14 ounces uncooked pasta ( rotini, spaghetti, whatever pasta you like )
2 cucumbers, chopped
1/2 onion, finely chopped
10 cherry tomatoes, quartered
3/4 cup pitted black olives, sliced
1 cup Italian-style salad dressing

Boil, drain, cool pasta, add all ingredients, chill for at least 1 hr. always better the next day.

Great for picnics and summer dinners, enjoy !! Have a blessed day !

Creamy Peanut Butter Pie

INGREDIENTS :
1 cup creamy peanut butter
1 (8 ounce) package cream cheese
1 1/4 cups confectioners' sugar
1 (12 ounce) container frozen whipped topping, thawed
1 (9 inch) prepared graham cracker crust or chocolate cookie crust - you can make your if you prefer.


DIRECTIONS
In a large bowl, mix together peanut butter, cream cheese and sugar. Then stir whipped topping into peanut butter mixture. Whisk until smooth and no lumps remain.
Pour filling into pie crust and refrigerate for about 3 hours until pie is firm. Enjoy !

Baked sweet onion dip ~







INGREDIENTS
1 (8 ounce) package shredded Cheddar cheese
2 cups mayonnaise
2 cups chopped sweet onion
3 tablespoons grated Parmesan cheese


DIRECTIONS
Preheat oven to 325 degrees F , Lightly grease a 1 quart baking dish.
In a medium bowl, mix Cheddar cheese, mayonnaise and sweet onion.
Transfer to the baking dish and sprinkle with Parmesan cheese.
Bake in the preheated oven 40 to 45 minutes, or until onions are tender and the mixture is bubbly and lightly browned. Enjoy with your favorite crackers,
chips or bread !

Potato Spears ~
4 sweet potatoes cut into thin spears
4 baking potatoes cut into thin spears
1/2 cup Kraft Light Zesty Italian Dressing
1/4 cup Grated Parmesan Cheese
2 Tbsp. chopped fresh parsley ( optional )



HEAT oven to 375°F.
TOSS potatoes with dressing.
SPREAD onto lightly greased baking sheet.
BAKE 1 hour or until potatoes are tender, turning after 30 min. and topping with cheese the last 5 min. Sprinkle with parsley if desired.
Love potatoes, and these are yummy !
